Double Dark Chocolate Brownie Cookies with Avocado


Yes, avocado, it replaces the butter. I hope you haven’t left yet. These are also refined sugar and flour free. Are you still here? 😉

I adapted these babies from The Smoothie Lover, staying true to the recipe but changing up a few of the measurements. Let me tell you, they do NOT disappoint! I revised the name as it was only fitting that brownie was somewhere in the title because that’s exactly what they taste like – rich chocolatey brownies. They are light and SUPER moist. Think the center brownie piece, the one that everyone wants {unless you’re the weird one that likes the crispy end pieces}.

Warning: These are so moist that if you try to pick them up like a normal cookie, half may fall victim to the floor. Be gentle, be kind.

Double Dark Chocolate Brownie Cookies with Avocado

Serves: 10
  • Ripe flesh of 1 small/medium avocado
  • ½ cup coconut palm sugar
  • 1 organic egg
  • ½ cup unsweetened cocoa powder
  • ½ cup dark chocolate mini chips
  • 1 tbsp water
  • ½ tsp baking soda
  1. Preheat oven to 350* and line a sheet tray with parchment paper
  2. With a hand mixer, cream together avocado and coconut palm sugar
  3. Add egg and beat until well combined
  4. Add cocoa powder and chocolate chips, beat until well combined
  5. In a small dish, dissolve baking soda in water then add to batter - mixing well
  6. Use a spoon to drop batter onto baking sheet. Keep about 2 inches apart.
  7. Bake for 8-10 minutes (mine were perfect after 9 minutes)
  8. Let cool before serving
  9. Store in an air tight container in the fridge

    These cookies are amazing…so easy to put together and very chocolaty. I baked them for 9 minutes and they were not set..,put them back for another minute but they still weren’t done. My husband suggested freezing them and that worked enough to get them off the baking sheet. I served them tonight with vanilla frozen yogurt..,OMG!!! Thank you for sharing your recipe. I love being able to use avocado in a dessert.
