Tzatziki Chicken Wraps


I know it’s only mid January but boy am I itching for Spring. Once Christmas comes and goes, I’m pretty much over the snow. Sawyer and I have been hibernating for the past 3 months and I’m pretty sure we’re due for some solid vitamin D…in the form of the sun hitting our skin. And not just any sun…sun accompanied by warm air, budding flowers, chirping birds, and bare arms. Not to mention I have a brand new JEEP jogging stroller that I want to put him in! Ah well, my hermit-ness only has a few months left I suppose. Sucking it up…

ANYWAYS…let’s talk about one of my favorite meals…

Remember that delicious tzatziki recipe from a few days ago? Well here is one of many ways you can use it! These tzatziki chicken wraps are bursting with flavor from the crispy naan to the fresh tomatoes and sumac on top. And don’t let the word “wrap” fool you. These are SO hearty, a full meal within themselves. We make these for dinner and never leave the table hungry!

Tzatziki Chicken Wraps

For the Tzatziki
  • Follow this link for ingredients and directions
For the Wraps
  • 1 lb. organic chicken breasts, diced raw
  • 8 oz portobello mushrooms, sliced
  • 1 medium red onion, diced
  • 2 cloves garlic, minced
  • 2 large vine ripened tomatoes, chopped
  • 1 package naan bread
  • 2 tbsp extra virgin olive oil
  • 2 tbsp coconut oil
  • 1 tsp sumac
  • salt & pepper to taste
  1. Prepare the tzatziki
  2. Preheat oven to 375* (for naan bread)
  3. Lightly coat both sides of naan bread with 1 tbsp coconut oil and place on a cookie sheet
  4. Heat olive oil and garlic in a large saucepan over medium heat
  5. When garlic is brown, reduce heat to low and add mushrooms and onion
  6. Let simmer 15-20 minutes until veggies are tender
  7. Remove veggies from pan and set aside
  8. Bake the naan bread for 15 minutes - flipping halfway
  9. Meanwhile, add the additional 1 tbsp coconut oil to same pan veggies were in and melt over medium heat
  10. Add diced chicken breast, salt & pepper, and cook until ¾ done
  11. Add mushrooms and onion back to pan and cook until chicken is done, about 5 minutes
  12. Assemble wraps (naan, tzatziki, chicken & veggies, fresh tomatoes, sumac)

    These look so good! I dont know whether to make the chilli or these next week 😉 Oh and I can’t wait for spring to use our jogging strollers!! we can take the boys into east town this time without having to carry them in our tummies :)
