Grilled Tofu Veggie Skewers with Peanut Sauce

Honestly though, what is better than food that has been charred to perfection and is seeping with that smokey grilled flavor? Nothing. The answer is nothing. Sometimes we grill in the winter, because well, we just know the food will taste better. It's so magical, that grill.

Skewer prep! They're so darn easy. We just drizzled them with a little olive oil and seasoned with sea salt & pepper. The grill does all the delicious work from there!

And the peanut sauce...I don't really have words. My palette has touched a lot of peanut sauces...homemade, store bought, served on restaurant dishes...but THIS one. Oh my...it tops them all.

Guess what? It's vegan too! Totally dairy free - so perfect for those that are lactose intolerant, or who don't consume animal products. The secret is using Sugar Free Coconut Milk from So Delicious. Has a bit of sweetness and a mild coconut flavor that makes this peanut dipping sauce AH-maze-ing! The best part is they're sold at most major grocers, and are shelf stable. My pantry is always stocked so I don't run out, because that would be tragic.

Sometimes dinner can feel so heavy and filling, but this one made me feel like a million dollars. It's balanced too - choke full of protein, nutritious vegetables, and mouth-watering, unforgettable flavor. Thank you, grill...and thank YOU, peanut sauce. I need it again in my life like...right this moment.

So without further ado...the recipe!


Grilled Tofu Veggie Skewers with Peanut Sauce

Serves 4

Ingredients

For the Skewers

  • 1 14oz package organic tofu (extra firm)

  • 1 white onion

  • 1 green pepper

  • 1 yellow pepper

  • 1 red pepper

  • 2 tbsp olive oil

  • sea salt & pepper

  • grill spray or oil

    For the Peanut Sauce

  • 1 cup So Delicious Sugar Free Coconut Milk

  • 1/3 cup natural peanut butter

  • 1 tbsp mirin

  • 2 tbsp soy sauce (low sodium)

  • 1 tbsp coconut palm sugar (or brown sugar)

  • 1/2 tsp paprika

  • 1/4 tsp cayenne pepper

  • 1/2 tsp sea salt

Instructions

For the Skewers

  1. Prep the tofu about 4 hours before grilling, cutting into 1 inch cubes and placing on a clean dish towel on a cookie tray to drain water. Keep cool in fridge during this process.

  2. After tofu has drained, cut the onion and peppers into 1 inch chunks, and place on skewers, rotating between veggies and tofu.

  3. Use a grill spray or brush oil on a clean grill, and heat to around 450*

  4. Place skewers directly on grill, and turn every few minutes, for about 10 minutes, until veggies and tofu are softened and begin to char.

  5. Remove from heat and serve on platter

For the Peanut Sauce

  1. Add all ingredients to a medium sauce pan and cook over low to medium heat until warmed through. Use a whisk to remove any lumps.

  2. Serve in ramekins for dipping, or drizzle directly over skewers.
