Warm Banana Bread Oatmeal
I love my oatmeal. Love love love. I also love bananas. There's currently a tower of frozen bananas in the freezer. What for you ask? So I can make banana bread whenever I want, all year round. Banana bread, including these muffins , is so sinfully delicious. This Banana Bread Oatmeal tastes like you're eating the bread {or muffin} but in oatmeal form. How fun is that?!
So don't let those morbid-looking dark spotted bananas on your counter go to waste! Make these oats for breakfast - stat!
Keep in mind this is oatmeal for one - so adjust accordingly if you're making it for the family! This is VERY kid friendly!
Warm Banana Bread Oatmeal Recipe
Ingredients
1/2 cup whole oats
1 cup water
1/2 very ripe banana
1 tsp chia seeds (optional)
1/4 tsp pure vanilla extract
1/4 tsp cinnamon
1 tbsp pecans, chopped
1 tsp pure maple syrup
coconut milk for topping (I used So Delicious)
Instructions
In a small bowl mash banana and mix in vanilla extract, chia seeds, and cinnamon
Bring water to a boil in a small saucepan
Add the oats and reduce heat to a simmer, cooking 2 minutes
Add the banana mixture and cook an additional 3 minutes over low heat
Cover and let cool for 3-5 minutes
I topped mine with a bit of pure maple syrup, pecans, and a little coconut milk!
Notes
Cook times may very if using different oats {i.e. quick oats or steel cut oats} just make sure to read the packaging and add the banana mixture several minutes before the oats are finished cooking!
