Rich & Creamy Chocolate Avocado Pudding
Lately I've been sad that I never get to see Sawyer's cute little tushie. Okay maybe for a brief moment here or there while changing a diaper but I needed more. Not to mention my sweet boy is now 7 months old and it seems like I was in the delivery room a week ago.
Baby butts are so squishy and adorbs, I felt it was my motherly duty to capture this cuteness forever {to which he will later in life resent me for}. So out came the camera and off came the diaper. Sawyer was a good sport for his first birthday-suit-shoot.

Every time I smile big he mimics with the same wide grin. I melt.

Okay so that was a mild but necessary distraction. Tushie fix cured! Now to the creamy dreamy chocolate avocado pudding. This stuff is extremely rich and oh so satisfying!
This chocolatey pudding is made creamy by avocados, banana, and coconut milk. Yes, this is a vegan treat! The banana flavor is mild, so no worries if you're not huge banana fan.
And if you're skeptical of putting avocado into a dessert, don't be. I posted these Double Dark Chocolate Brownie Cookies with Avocado several weeks ago and even the avo-haters thought they were divine! Just trust me.
Chocolate Avocado Pudding
Serves: 2
Ingredients
1 ripe avocado
1 ripe banana
1/4 cup cocoa powder
1/4 cup coconut palm sugar
1/2 tsp vanilla extract
2 tbsp coconut milk from box (I used So Delicious)
top with chocolate shavings and fresh fruit (optional)
Instructions
Add all ingredients to a food processor and blend until smooth!
Chill in fridge an hour before serving.
Garnish with chocolate shavings and/or fresh fruit
Notes
Has a hint of banana flavor. Add more milk if you want a thinner consistency. This recipe is gluten free, dairy-free, vegan, and delicious ;)
